Easy Summer Barbeque Dressing

Summer is in full swing, and that means lots of barbeques! Barbequed chicken and steak, hamburgers and grilled salmon, and platters of fresh grilled vegetables all beg for a hit of intense flavour. Traditional barbeque sauce is sweet, spicy and delicious.  It can come at a cost, often loaded with sugar and processed ingredients adding unnecessary calories and preservatives.    

There are so many fresh and vibrant herbs in our gardens and markets during these dog days!  Why not take advantage of the bounty and make a bright, healthy dressing to accompany your meat, fish and vegetables?

This simple recipe can be used with any variety of your favourite herbs to liven up your barbeque and brighten your taste buds! The best part is that it is fresh, not processed and laden with preservatives and sugar!

Use as a marinade for chicken, fish, pork or fish before barbequing, or as a sauce when the meat comes off. Add to freshly grilled vegetables or a satisfying salad for a vibrant dressing.


Easy Summer Dressing or Marinade

In a food processor or blender combine any combination of the following:

A handful of each herb will do. Add to the herbs:

Buzz in the food processor and stream in 1 cup of extra virgin olive oil. Buzz until silky and smooth. Keep in an airtight container in the fridge for up to two weeks, or freeze for up to six months.
